I’ve spent this week in bed with a common cold… it really does suck. I’m to sick to work, socialise, be my happy normal self… I look forward to being back to feeling great as quickly as possible.

Between watching some really poor films on the box, sleeping and the occasional checking of emails, I’ve also been making some great comfort food to help me get through my cold and this time I actually remembered to take some images (although not that good!) for you all:

Red cabbage, Apple, Bacon and Balsamic Vinegar

This is my ULTIMATE comfort food: red cabbage slowly cooked on the stove (for an hour) with streaky bacon and a couple of apples thrown in. I also add half an onion and some balsamic vinegar which really does lift the dish to a whole new level. So simple but ooo soo lovely. Nothing else is needed to make this a great dish to tuck into while watching a good film.

Beef Stew

Comfort food for me is definatley all about slow cooking. Here I have some beef (shin), carrots, rosemary, bay leaves, red onion, garlic and half a bottle of red wine, which is all cooked together in the oven for 3 hours. The beef turns really soft and tender and the sauce thickens which coats the mash potatoes in a very satisfying way. This is food heaven for me!

For some unknown reason I like to eat pizza when I’m ill and sure enough it makes me feel worse haha

Boiled eggs and bread. Maybe some soup aswell.
