Fish wrapped in bacon with asparagus and lemon mayonnaise

This is an excellent meal that really does bring great flavors and textures together. When I first made this I didn’t think bacon would go with fish, but how wrong was I! Bacon goes extremely well with not only fish, but also asparagus and mayo too!

Here is what you’ll need:

  • White Meaty fish fillets (I used Red Snapper as it’s one of my favs)
  • Smokey bacon
  • Lemon - Juice and peel
  • Rosemary
  • Mayo

Firstly, peel the lemon skin without the bitter while bit, and chop finely. Mix with black pepper and rosemary. Pat this over your fish fillets and then wrap some smoky bacon around them. Heat a pan with olive oil and fry the skin side of the fish fillets for one minute, then transfer to the oven (200oc) for 15mins. While this is cooking, get the juice out of the lemon and add it to some mayo. When the fish fillets are cooked, remove and rest for 2 minutes… which gives you time to cook the asparagus.  

This is one of the best meals I can cook, and it’s so damn easy! Give it a try!

Hmm… sounds interesting! I would have thought the same about bacon and fish too.
