For as long as I can remember, I have been addicted to my mums cooking cornflake treacle pie. It’s dead easy to make (even though I’ve never made it myself, it wouldn’t be the same would it?) and anyone with a sweet tooth will surely love it as much as I do!
You basically make some short cut pastry, let it cool and spread strawberry jam all over the top (Don’t be stingy with the jam!) In a saucepan, add a big knob of butter and let it melt. Then add the cornflakes and treacle… stirring until mixed over a low heat. Add the treacle coated cornflakes over the pastry and let cool.
That’s it. So simple, but so, so delicious!
Luckily my mum still makes me this when ever I visit home. Here is the last one she made…

Your cornflake and treacle tart was super, triffic and a wonderful reminder of schooldays. I rember my Gran adding coconut so I raided the larder and found a packet of coconut cream, probably meant to be used when making an indian type curries. I added this and it gave the tart another dimention. yummy, thanks for the memoury
My fella thought I was mad when I mentioned this, I said that I was going to make him some and then he would understand… That was about a month ago, but everything that I need for it is always in the house anyway so I think it may happen this week lol
